Cookery class with Nazlina Hussin of Pickles and Spices In The Tropical Spice Garden


I had the chance to be present at a cooking class conducted by Nazlina Hussin of www.pickles-and-spices.com held at the Spice Cafe in the Tropical Spice Garden. The cooking venue is on the wooden deck which is surrounded with woods with a breathtaking sea view. 

The self-taught cook, Nazlina Hussin promotes Malaysia food by sharing the food and  also our culture with hands-on experience. Students will get to learn the origins of spices, their significance in Malaysian cuisine and using the old methods as practiced by our ancestors.

She was seen preparing several street food treats together with some students in the class. The food for the day was Char Koay Teow, Spring Rolls (Poh Piah) and the dessert, Bubur Cha-cha. 

The students, Jessica and Laurens get hands on experience in the preparation of the food and the reasoning in the choice of ingredients. They begin the preparation from scratch, starting from slicing, cutting and frying. The first dish was the dessert which had them taking part in straddling a traditional coconut scraper to extract the flesh of the coconut.

The students had their hands full preparing the filling for the Spring Roll (Poh Piah) which after then proceed with the making of the sauces.

They took turns to assemble all the ingredients on the Poh Piah skin before rolling them up.

Nazlina showed and guided the students in the frying of the Char Koay Teow. After all the ‘hard’ work, the students not only get to learn a range of tasty dishes, but also get to taste them as well!
